Mashed potatoes are a popular side dish for several meals, but unfortunately potatoes are fully of starches and carbohydrates. For some individuals, such as diabetics, the carbohydrates of potatoes are not always appropriate for meals due to the potential blood sugar fluctuations. Fortunately, making cauliflower mashed potatoes is as simple as regular potatoes, but has fewer sugars for a diabetic or low sugar diet.
Cauliflower Mashed Potatoes – Boiling the Cauliflower
One method of making cauliflower mashed potatoes is through boiling the ingredients. In this method, the cauliflower is first cut into small pieces, including the core of the vegetable, and then put it aside.
Pour water into a pot and then turn on the stove. Allow the water to boil and then add the cauliflower to the water. Turn the heat to medium and allow it to cook until the cauliflower softens. It usually requires between 20 and 30 minutes, depending on the size of the cauliflower pieces.
Once soft, drain the water by pouring the cauliflower through a strainer. Put a small plate over the cauliflower in the strainer and press down to remove excess water. Toss the vegetable and repeat.
Put the cauliflower and any skim milk and spices you prefer into a blender or food processor and whip until it is creamy. If you like baked potatoes even more read how long to bake a potato.
Cauliflower Mashed Potatoes – Steaming
The other main method of making cauliflower mashed potatoes is through steaming. Cut the cauliflower into small florets or pieces and put them in the pot or cooking device.
Instead of boiling the cauliflower directly, put a smaller amount of water so the vegetable steams. Steaming methods vary on your personal preferences and the type of equipment available. One large pot, a smaller pot and a lid for the larger pot is sufficient if you do not have any cooking equipment specifically for steaming vegetables or foods.
Steam the cauliflower until it becomes soft. Like boiling, steaming typically takes around 20 to 30 minutes before the cauliflower is softened enough to make into faux mashed potato.
Pressing water out is not necessary since the cauliflower is steamed rather than boiled. Put the softened vegetable into a blender or food processor and blend until creamy.
Cauliflower Mashed Potatoes – Additions
Cauliflower mashed potatoes is a basic recipe. Like regular mashed potatoes, the addition of other ingredients changes the flavor and adds definition to your food.
The most common addition to the mashed potatoes is skim milk. This is usually added during the blending process to give a creamy texture. In most cases, around 1/8 to 1/4 cup of skim milk is appropriate. Too much makes the food soggy rather than creamy.
Some recipes call for the addition of different cheeses. Cheese adds an element of flavor to the food, making it a little sharper or milder depending on the type of cheese used. Parmesan is a good option for a mild taste. A little cheddar adds a sharp flavor.
Add some butter. Real butter is best for enhanced flavor, though margarine and oils are appropriate if preferred. If the butter is unsalted, add a little salt to taste.
Pepper, paprika or any other spices you prefer are also appropriate for an improved or different flavor.
You don’t have to give up mashed potatoes just because of starch. Add cauliflower instead of potato for a similar taste and texture.
