  • 1 large sage leaf- chopped
  • 1/2 teaspoon rosemary- chopped
  • 1/2 teaspoon thyme
  • 1/2 teaspoon lemon zest- grated
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon unsalted butter- melted
  • 1/2 tablespoon kosher salt
  • Freshly ground black pepper- seasoned to taste

Preheat the oven to 425°. Using a food processor or the ‘pulse’ setting of a blender, blend the sage, rosemary and thyme until they are chopped finely.

Add the lemon zest, then blend until smooth. Finally, add the salt and blend until the salt is fully ground. Put this mix into a small bowl and set aside.

Toss the potatoes in the oil and butter in a large bowl. Season this with freshly ground black pepper to taste. Place the potato halves onto two baking sheets in a single layer. Bake potatoes for 25 minutes.

Remove the potato halves from the oven and generously coat them with seasoning mix. After fully coated, bake the seasoned fingerling potatoes for 5 minutes or until fully tender.
