Ingredients
- ½ Stick of Butter
- 1/3 Cup of Chopped Green Onion
- 1/3 Cup of Chopped Celery
- 6-8 Cups of Chopped Red Skin Potatoes (Leave the Skin On)
- 4 Cups of Chicken Broth
- Black Pepper & Kosher Salt to Taste
- ¼ Cup of Water
- 3 Diced Cloves of Garlic
- 2 Cups of Shredded Cheese (Cooks preference as to type of cheese)
- ¼ Cup of Whole Milk (More or less dependent upon preference)

Start by cooking down the vegetables into a large sauce pan. The size of the pan needed will be dependent on the amount of ingredients you’re using. Smaller portions will require smaller pans, and so on.
Once cooked down, add the remaining ingredients, leave the cheese & whole milk, and bring to a simmer. Once tender, add in the ¼ cup of whole milk and bring to a solid boil for about a minute.
At this point, add the two cups of shredded cheese, and depending on how thick or thin one prefers their potato soup, more or less whole milk can be added as a thickening agent. Once the cheese has melted, the potato soup is ready to serve.
